Hearty Beef Stew

This beef stew has been a family favourite for ages. It’s perfect to warm you up on those cold winter days. We love recipes that you can throw into a crockpot and forget about while you’re at work — this one truly takes the cake.

To kick things up a notch, add in a cup of Guinness or red wine to replace some of the beef broth. The result is a VERY flavourful stew.

A hearty and delicious beef stew that will be sure to warm you up in the Fall and Winter months.

Ingredients

  • 2 lbs stewing beef
  • 1 tsp salt
  • 1 tsp pepper
  • 1 medium onion
  • 2 celery ribs
  • 2-3 cloves garlic
  • 6 oz can tomato paste
  • 32 oz (4 cups) beef broth
  • 2 tbsp Worcestershire sauce
  • 2 cups carrots
  • 5-6 small red potatoes
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1/4 cup flour
  • 1/4 cup water
  • 1 tbsp dried parsley
  • 1 tsp oregano

Directions

  1. Sear the beef over medium-high heat in a cast iron or heavy pan.
  2. Add all other ingredients to a large pot or slow cooker, leaving out the frozen peas, corn, flour, and water.
  3. Once the beef is seared, add it in. Cook on low in the slow cooker for 6 hours, or on the stove on medium-low for 2 hours).
  4. Add in frozen corn and peas about 30 minutes before serving. At the same time, mix the flour and water together and add it in. Turn the slow cooker on high for the remaining time.
  5. When ready, the stew should be thick, and the meat should fall apart easily.
