Mini Ham & Broccoli Quiches

Delicious mini quiches with ham, broccoli, and cheddar cheese. Perfect for breakfast, brunch, or a light snack.

Ingredients

  • Pre-made mini shells or homemade pie crust (enough for 12 mini shells)
  • 6 large eggs
  • 2 tbsp Greek yogurt or sour cream
  • Salt and pepper to taste
  • ½ cup old-fashioned or honey ham, diced
  • ¼ cup steamed broccoli florets, chopped small
  • ½ cup cheddar cheese, grated
  • Optional: Chives for garnish

Directions

  1. Preheat your oven to 350°F (175°C).
  2. Place the mini pie shells on a baking sheet and bake until lightly browned, about 5–7 minutes.
  3. While the shells are baking, whisk together the eggs, Greek yogurt (or sour cream), salt, and pepper in a mixing bowl.
  4. Dice the ham into bite-sized squares and chop the steamed broccoli florets into very small pieces.
  5. Remove the shells from the oven and let them cool for a few minutes.
  6. Fill each shell with the egg mixture, then evenly sprinkle the diced ham and chopped broccoli into each shell. Top with grated cheddar cheese.
  7. Return to the oven and bake for an additional 5–10 minutes, or until the centers are set.
  8. Remove from the oven and garnish with fresh chives, if desired. Serve warm.

Notes:
– You can customize these quiches by swapping the ham for cooked bacon, sausage, or your favorite protein.
– Ensure the broccoli florets are chopped very small for even cooking.
