5 Fast-Growing Microgreens for Your Kitchen Garden

Growing microgreens is one of the easiest and fastest ways to enjoy fresh, nutrient-packed greens all year round. In as little as seven days, you can have a delicious and nutritious addition to your meals. Even better, with just a bit more time, you can let your microgreens grow into a baby salad mix for an even more versatile option. Whether you’re a seasoned gardener or just starting, these five fast-growing microgreens are the perfect addition to your kitchen garden, ready in 7 days!

1. Broccoli

Broccoli microgreens are a powerhouse of nutrition, loaded with antioxidants that support detoxification and immune health. These microgreens grow quickly and have a mild, slightly peppery flavour that pairs well with salads, sandwiches, and smoothies.

2. Arugula

Known for its distinctive peppery kick, arugula microgreens are an excellent addition to your dishes. These greens are rich in vitamins A, C, and K and are ready to harvest in just 6-7 days. They bring a burst of flavor to pizzas, wraps, and pasta dishes.

3. Radish

If you’re looking for a bold and slighty spicy option, radish microgreens are your go-to. These greens add a vibrant color and zesty bite to any meal. Packed with vitamin C, potassium, and folate, radish microgreens are as nutritious as they are tasty. There are plenty of different types of radish microgreens. Examples include daikon radish, purple stem radish, China Rose, and Rambo. Each type adds its own unique flavour.

4. Mustard

Mustard microgreens are famous for their tangy, spicy flavor that’s reminiscent of horseradish. They’re perfect for spicing up sandwiches, salads, and soups. High in vitamins A, C, and E, mustard microgreens are ready to harvest in a week or less.

5. Kale

Kale microgreens are a milder, tender version of the mature plant, yet they pack all the same nutrients. Loaded with calcium, iron, and vitamin K, these greens are versatile and ready to harvest quickly. Use them in smoothies, grain bowls, or as a garnish for a nutritious boost.

How to Grow Microgreens Sustainably

Growing microgreens is not only easy but can also be done sustainably with a little creativity. While some people use a soilless medium, such as a grow mat, I personally prefer using soil because I find it gives the microgreens a better flavor. However, I encourage you to try both methods and see which works best for you!

Here are some sustainable tips for growing your microgreens:

  • Reuse Containers: I grow my microgreens in “single-use” plastics from store-bought salads or yogurt. These containers are only single-use if you use them once! Rinse them out, poke a few drainage holes if necessary, and you’ve got a perfect growing tray.
  • Get Creative: You don’t need fancy equipment to grow microgreens. Shallow bowls, ramekins, or any container you have on hand can work beautifully.
  • Use a Grow Light: If you don’t have a sunny windowsill, a grow light is a great alternative. Grow lights will ensure your microgreens get enough light to thrive. Check out my post here about how to choose the right grow light for your space.
